This carrot salad is crazy good and crazy healthy. Protein rich fat-free Greek yogurt replaces mayonnaise in the dressing which is lightly sweetened with honey. Toasted sunflower seeds add even more protein, fiber, and iron.
You could purchase pre-shredded carrots but I prefer grating my own. They are more tender and you get a little bit of a workout in the process!
Recipe:
• 1 - 5 oz. container plain non-fat Greek yogurt
• Juice from ½ a lemon (approx. 2 Tablespoons)
• 1 Tablespoon honey
• 1 lb. shredded carrots
• ¾ cup dried cranberries or raisins
• ½ cup roasted sunflower seeds (or chopped nuts)
Whisk the yogurt, lemon juice, and honey in the bottom of a large mixing bowl. Add carrots, cranberries, and sunflower seeds and stir to combine. Refrigerate for a minimum of one hour before serving. Tastes better the next day!
Optional additions or substitutions: Replace the dried cranberries with raisins. Replace the sunflower seeds with chopped walnuts, pecans, or peanuts. Add crushed pineapple.
