Sheet Pan Veggie Fajitas

These easy, fuss free fajitas give you all the flavors of a restaurant meal without the high price tag. A great one to serve for those meatless Mondays, Fridays, or any other day.


Ingredients:

  • 1/4 cup olive oil

  • 3-4 cloves garlic - minced

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 4 portabella mushrooms - cut crosswise in to 1/4" planks

  • 2 bell peppers cut into 1/4" strips

  • 1/2 red onion cut into 1/4" slices


Preheat oven to 400F. Line a large baking sheet with parchment paper or non-stick foil. Combine olive oil and spices in the bottom of a large bowl. Add vegetables. Toss and stir until they are coated with the oil and spice mixture. Spread the vegetables on the baking sheet in a single layer. Roast in the oven for 15-20 minutes. Stir and return to the oven for an additional 15-20 minutes until slightly charred. Serve with your choice of tortillas and toppings (lime juice, sliced avocado, sour cream, cilantro.)


Makes 4 servings. 156 calories per serving not including tortilla and toppings.
